Tomato Pumpkin Stew:
1 box silken tofu
1 tomato
½ onion
4 cups chopped pumpkin
Fresh cilantro
3 tablespoons soy sauce
4 tablespoons ketchup
3 tablespoons oil
2 cup water
¼ teaspoon pepper
Vegan Pumpkin Mouse
½ package ginger snaps
(or graham crackers
or other cookies)
1 can (15 ounces)
puree pumpkin
½ package of firm tofu
4 ounce non-dairy
cream cheese
(half of 1 package)
1 package
soy whip cream
1 tablespoon
pumpkin spice
¼ cup
organic agave nectar
1 – 2 teaspoon
pure vanilla extract
