In light of a recent report by the Inspector General’s office of the US Department of Agriculture (USDA), which found insufficient monitoring of many harmful meat residues in cattle, US bestselling investigative journalist and author of “Animal Factory” David Kirby highlighted the report’s observations in his online article, “Drugs, Poisons and Metals in Our Meat.”

Published on the popular US news website “The Huffington Post,” Mr. Kirby wrote that the USDA found over 90% of these residues to be present in dairy cows, whose meat is often consumed as ground beef, and veal calves, who prior to their slaughter are fed unmarketable milk laden with antibiotics.

While cooking meat is said to remove bacterial pathogens, residues such as hormones, antibiotics, heavy metals and pesticides remain, with the heat potentially creating even more harmful components.
Despite their obvious hazards,Mr. Kirby reports that even when substances such as copper and highly toxic dioxin are detected, they are not reported because there are no standards that limit their use.
