Sunny Sweet Potato
Bean Stew:
  • 1 sweet potato (or yam)
  • 2 cups baby carrots (or other carrot varieties)
  • 1-15 ounce can organic diced tomatoes (or fresh tomatoes)
  • 2-15 ounce cans organic red kidney beans
  • 1-15 ounce can organic light coconut milk
  • 1 tablespoon olive oil
  • 1 cup vegetable broth
  • 2 teaspoons curry powder
  • 1/2 teaspoon Italian Seasoning
  • 1/4 teaspoon red pepper Flakes
  • 1/2 teaspoon ground all-spice (or pumpkin pie spice)
  • Sea salt
  • Black pepper

Tropical Pineapple Smoothie:
  • 2 cups organic soymilk (or rice or almond milk)
  • 1-20 ounce can crushed Pineapple
  • 3 tablespoons organic Sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons coconut milk
  • 2 cups ice cubes
