VEGETARIANISM : THE NOBLE WAY OF LIVING
 
Vegan Sudanese Soup and Mahshy Al Kadar(Stuffed Veggies) (In Arabic)

INGREDIENTS:
Soup:

  • 1 cup Yellow lentils
  • 3 small potatoes
  • 4 carrots
  • Some salt
  • 1 teaspoon of pepper

Stuffed Vegetables:

  • 5 bell peppers
  • 400gr Brown rice
  • 3 Tomatoes
  • 2 Onions
  • Garlic
  • Chili pepper (green beet)
  • Ginger
  • Olive oil
  • Pepper
  • Salt
  • Cinnamon
  • Cardamom
  • Dried coriander
  • Tomato sauce - salsa
PREPARATION:

Soup:

  1. Peel potatoes and carrots, cut into small pieces then wash in salt water
  2. Wash lentils, then drain water out.
  3. Put potatoes, carrots, and lentils into a water pot, cook for 15-20 minutes.
  4. Season with salt and pepper to taste
  5. After the soup is done, put it in the blender, blend well.

Stuffed Vegetables

  1. First, add some oil and the rice to a pot; cook the rice with medium heat
  2. Add the boiled water equal to double the amount of rice. Cover it on a medium heat and add some salt until It’s cooked.
  3. Onion chopped into small pieces
  4. Green bell peppers, discard top part and remove seed.
  5. Tomatoes cut to small pieces, blend well.
  6. Heat olive oil, put onion and garlic in. After 5 minutes, add in 2 tomatoes which have been blended well.
  7. Add the cinnamon, cardamom, and dried coriander.  Cook it for a little bit till it thicken  
  8. Stir well the mixture with brown rice to make filling.
  9. Stuff fillings into green bell pepers.
  10. Heat oil, then fry bell peppers in there to golden.
  11. Mix well 1 blended tomato, some tomato sauce salsa, some salt, some cinnamon powder, some pepper, and some gingers together.
  12. Sprinkle this mixture onto the bell peppers, cover with lid, cook for a few minutes until done.
