A comprehensive review commissioned by the French food agency AFSSA and conducted by researchers at the University of Aix-Marseille has concluded that organic produce has a number of clear advantages.

Author Denis Lairon coordinated the two-year study, which updated a prior evaluation published in 2003. These recent findings include the discovery that organic produce contains more minerals and antioxidants than its conventionally grown counterpart, with at least 94% and up to 100% being free from pesticide residues.

Moreover, along with the benefits of elevated iron, magnesium and other micronutrients, organic vegetables are 50% lower in nitrates.
