INGREDIENTS:
- 2 cup flour, white or brown
- 2 tsp cinnamon
- 2 tsp baking soda
- ½ tsp salt
- 3 tsp egg replacer
- ¾ cup vegetable oil
- 1 cup soy milk
- 1 tbsp vinegar
- 1½ cup sugar, white or brown
- 2 cup grated carrot
- 1 cup crushed pineapples
- ½ cup dried coconut
Icing:- ½ cup soy butter
- 4 oz vegan cream cheese (Tofutti or Yoso Spreadables)
- 2 cup icing sugar
- 1 tsp vanilla
