(For all ingredients, please use organic versions if available) (Serves 4)
3 cups uncooked rice
1 onion, chopped
1 medium green bell pepper
1 potato, chopped
1 potato, not chopped
1 cup slivered almonds
1 cup carrots, shredded
1 cup parsley, chopped
1 cup cauliflower florets
1 cup celery, chopped
1 cup corn
1 medium zucchini
1 medium aubergine
1–2 cups mung bean sprouts
1 lime or lemon
Turmeric powder
Sesame seeds
Salt
Olive oil
Directions (to prepare rice):
- Soaked the rice for 2 hours (so that when we add all the ingredients, our rice
Will keep its texture and won’t be soggy
- Add the 3 cups of soaked rice into a sufficient amount of boiling water and boil it with some salt
- When the rice starts to float to the surface of the boiling water, that’s when we drain the water
- Pour it into a strainer
Directions (to make vegetable):
- Add some oil to the frying pan, and put it on medium heat
- Saut all the vegetables a little (because if they are wet, when we mix them with the rice, the mixed rice will become soggy)
- When the oil is somewhat hot saut the onions
- Add some turmeric powder and mix it in
- Add the celery (see which one is harder to cook)
- saut it a little so that its moisture evaporates
- Add the potatoes. By the time we fry the potatoes, you can see that most of the oil is gone. So it’s time to add the aubergine
- Add the chopped zucchini
- Add cauliflower (you can use mushrooms, or green peas)
- Add corn
- Add carrot
- Add the herbs, which is 1 cup of parsley
- Add almonds
- Add green bell pepper
- Add 1 (organic) lime to the vegetables
- Add the salt
- Add the curry powder
Directions (to make sumptuous iranian vegetable rice & sesame potato tahdig):
- Add sufficient oil to the rice pot
- Put the grated potatoes at the bottom of the pot, flatten it
- Add some salt at this stage
- Add the sesame seeds on top of the potatoes
- Add the rice and vegetables, layer by layer
- Let the rice steam for only 15 minutes
- While our rice is being readied, we saut the sprouts a little then add it on top of the rice
- While the dish is being cooked. Our vegetable rice is ready
- Put it on a big plate and decorated it with some fresh parsley
- The grated potatoes we added to the bottom of the pot with the sesame seeds can be served as a separate dish alongside our main dish
- Ready to serve
