Napoletana Pizza:An Ode to Vegan Cheese

INGREDIENTS: Dough:
- 4½ cups (20.25 ounces) unbleached high-gluten, bread, or all-purpose flour, chilled
- 1¾ (.44 ounce) teaspoons salt
- 1 teaspoon (.11 ounce) instant yeast
- ¼ cup (2 ounces) olive oil (optional)
- 1¾ cups (14 ounces) water, ice cold (40°F)
- 1½ teaspoons sugar
Sauce:
- 1 (28 ounce) can crushed tomatoes (Hunts brand works well)
- 1 tablespoon minced garlic
- 2 tablespoons of extra virgin alive oil
- 4 teaspoons of organic sugar
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- ½ teaspoon dried basil
- ½ teaspoon ground black pepper
- 1½ teaspoons of salt to taste
- 2 teaspoons salt
