Valentine's Day Vegan Cupcakes      

INGREDIENTS:

  • 1 ¾ cups of flour;
  • 1/2 cup of oil;
  • 1 cup of sugar;
  • 8 oz of red fruit, fresh, frozen or canned, we are using cherries;
  • 1 tbsp of white distilled vinegar;
  • 1 teaspoon of baking soda;
  • 1 tsp of vanilla extract


Vanilla butter icing

  • ½ cup nondairy butter at room temperature;
  • 2 cups of powdered sugar;
  • 2 Tbsps of nondairy milk;
  • a few drops of red food coloring
  • and a teaspoon of baking soda.


Valentine’s Day is global sweet holiday for all lovers around the world. During this day, friends and classmates, family and sweethearts exchange cards with poems, hearts and candy to show their love and affection for one another. Cupcakes are perfect dessert for any party. Your family members, friends, colleagues, especially children, all love cupcake sweets.


Cooking Instructions


(1) Mix flour evenly with sugar and baking soda in a large bowl and set it aside.

(2) Mix oil, vinegar, vanilla and fresh fruits of your choices. Stir them up evenly.

(3) Have a little hole in the middle of flour, and slowly pour in the mixture in step 2. Stir them until they are well combined.

(4) Place in liners in a muffin tray. Fill cupcake mixtures in each muffin liner about half way.

(5) Preheat the oven to
350o F or 180o C. Bake cupcakes in oven until they are risen nicely and soft.

(6) Make vanilla butter icing. First, cream the nondairy butter with beater or electric mixer. Add powdered sugar and beat the mixture again. Add nondairy milk and vanilla and beat again for 2-3 minutes until the frosting is nice and fluffy. Add food coloring and stir evenly.

(7) Prepare fruit top by cutting strawberries in heart shapes.

(8) Take a cupcake, spread icing on it and then place your favorite fruit on the top. Then it is ready to be served.
