APPETIZER: Marinated Thai Eggplant (Cà pháo ớt)

ENTRÉE:
Challenging Tofu
200 grams firm tofu
1 tablespoon of olive oil
1 large mushroom
Nori seaweed
Pear
Apple
½ tablespoon mushroom seasoning
1 tablespoon soy sauce
½ - 1 tablespoon of chili beans sauce
Dash of black pepper
Dash of coriander seed pepper
A few squeezes of chili sauce (optional)

SIDE DISH: Boiled Green Beans
Fresh green beans
Water
Pinch of salt

DESSERT: Hot Banana Quickie
100 grams all purpose flour
1-2 bananas
Pinch of salt
Water
2 tablespoons of oil
Fruit syrup

Appetizer: Marinated Thai Eggplant
  1. Take a couple of marinated eggplant with chili sauce ready to eat.
  2. Put the eggplant on the plate and serve it.
Entrée: Challenging Tofu
  1. Turn on the heater to boil some water.
  2. Add in a pinch of salt and let the water boils.
  3. Meanwhile, prepare the sauce. Take a piece of pear, a piece of apple and then chop it into small pieces. Chop it fine. The finer, the better. For smoother pieces, peel away the skin.
  4. Put the green beans into the boiling water. After one minute, put in the tofu and let it cook for a while and then turn the heat off. Cover the pot.
  5. Meanwhile, take the mushroom and chop it into fine little pieces. Set it aside.
  6. Warm up the pan and add in a little olive oil. Let it heat up
  7. Break up a couple of seaweed into little pieces.
  8. When the oil is ready, add in the chopped mushroom and saute it.
  9. Add in a tablespoon of mushroom seasoning, a dash of black pepper, a dash of coriander seed pepper, a tablespoonof soya sauce and a tablespoon of hot sauce or more according to taste.
  10. Add in the hot chili bean sauce, mix it all together.
  11. Add in the seaweed bits and then the apple and pear. Stir.
  12. Turn the heat off.
  13. Take out the tofu from the pot, put it on the plate and then pour the sauce on top of the tofu.
  14. Take out the green beans and put it next to the tofu.
  15. The challenging tofu can be served with rice.

Dessert: Hot Banana Quickie
  1. Mash the banana with a fork and turn it into broken and smooth pieces.
  2. Add in a pinch of salt into 100 gram of multipurpose flour and mix it well.
  3. Add in the banana into the flour and mix it with a fork or with the hand.
  4. Add in a little bit of water until it becomes like dough.
  5. Add in a couple of tablespoons of oil into a pan, and heat it up.
  6. When the oil is already hot, put in the dough in small unshape little pieces.
  7. The pieces should be thin about half centimeter.
  8. Fry the banana pieces until golden brown on both sides.
  9. Put the pieces on a plate lined with kitchen towel so that the excessive oil can be absorbed.
  10. Serve it hot with fruity syrup.
