Vegan Waldorf Salad with Soya Tofu Dressing

WALDORF SALAD
Lettuce
Coriander
Carrot
Cucumber
Golden Delicious apple
Roasted walnuts
Soya sprouts
SOYA TOFU
DRESSING
Silky tofu
Soy sauce
Lemon juice or vinegar
½ tsp of sugar

  1. Wash all the vegetables in salty water and soak it for 3-5 minutes to take out all the bad residues as well as the dirt.
  2. Cut the carrot into small thin shreds.
  3. Chop the apple into thin pieces.
  4. Wash the soya sprouts and set it aside.
  5. Mash the silky tofu with fork and then put about a quarter of a lemon. If it is too sour, add a little bit of water or more soya sauce.
  6. Add in half a teaspoon of sugar. Mix until the sugar dissolves.
  7. Toast the walnut for about20 minutes at 150 degrees or just put it on a roast pan and roast both sides of the walnut.
  8. Put the vegetables a big bowl and mix it well.
  9. Chop some coriander and add in if any and mix it too.
  10. Put in the carrot and put the cucumber on top.
  11. Put the apple on top of it or around it.
  12. Put the roasted walnut on top.
  13. Pour the soya tofu sauce on top.
  14. Ready to be served.
